July: Taco Pie

Another dinner pie.  This one is pretty simple, I made it in the late afternoon and we ate before the ballgame last week, then I had lunch the next day too!

Taco Pie

Taco Pie

Ingredients
1 pkg taco seasoning mix
1 lb lean ground beef
½ cup water
½ cup salsa
1 4 oz. can diced green chilis, drained
1 (8 ounce) package refrigerated crescent rolls
2 cups crushed tortilla chips
1 cup sour cream
1 cup shredded Cheddar cheese
Tomato, lettuce, avocado

Directions
1.   Brown beef. Drain off the oil. Stir in seasoning mix, water, salsa and chilis. Simmer until most of liquid is reduced.
2.   Separate crescent dough into 8 triangles. Place triangles in an ungreased 10-inch pie pan, pressing to form a crust. Sprinkle 1 cup corn chips over the bottom of crust. Spoon meat mixture over crust and corn chips. Spread sour cream over meat mixture, and cover with cheese. Sprinkle remaining corn chips over the top.
3.     Bake at 375 degrees F for 20 to 25 minutes, or until crust is golden brown.

4.     Top with died tomato, shredded lettuce and avocado slices
