Slow Cooker Broccoli Cheese Soup

My daughter's favorite is broccoli cheese soup.  This one is really simple, you really just toss everything in the crock pot and check back later!!

Broccoli Cheese Soup


Ingredients:
2 Tbsp butter
1/4 c celery, diced*
2-3 cloves garlic, minced
2 fresh broccoli stalks, chopped
3 c chicken broth
1 can (12 oz) evaporated milk
salt, pepper and other seasonings to taste
8 oz Velveeta, cubed
1 1/2 c shredded sharp cheddar cheese
1 c shredded Parmesan cheese

Directions:
1. In small skillet, heat butter over med-high heat and sauté celery and garlic until tender.
2. Transfer to crockpot and add broccoli, liquids and seasonings.  Cover and cook on low for 3-4 hours or until broccoli is tender.
3. Add cheeses and stir until melted.

Serve & enjoy!!


*if your family likes onion, add 1/4 c and sauté w/ celery and garlic
