Pie of the Month

It's the 2nd Thursday of the month, which for me this year means Pie Night!  This month our savory pie was Chicken and Mushroom Pie!


The kids all turned their nose up as soon as they heard it had mushrooms in it, but guess what….they all ATE it!  Kaylee even went back for seconds!!



This one was really good and will be added to the "make again" list….and it smelled so good while the filling cooked. =)

Chicken and Mushroom Pie

Ingredients

4 chicken breasts, cubed
2-3 cloves garlic, minced
1 tsp chicken base
1 pkg fresh mushrooms, sliced
½ cp heavy cream
½ cp white wine
1 cp swiss cheese
1 refrigerated pie crust
1 puff pastry sheet
1 egg, beaten
Olive oil

Direcrtions

Preheat the oven to 350 degrees F
Heat oil in a large skillet over medium-high heat. Saute mushrooms, garlic, and chicken; until chicken is cooked and vegetables are tender. Reduce the heat to medium, and add the cream, chicken base, and wine; cook and stir for about 10 more minutes. Remove from the heat, and stir in the cheese.

Place pie crust in bottom of 10" pie plate.  Pour the mushroom filling over the top. Cover with the puff pastry sheet, and press the edges together to seal. Make some holes in the top with a fork. Brush the top with beaten egg.
Bake for 45 minutes, or until golden brown.  Let stand 5-10 minutes before serving.
