Banana Pudding Pie

So I didn't really do 'Pie of the Month' this year, but I did end up making this pie in March.  It is rich and creamy, and tastes just like banana pudding in pie form.  What more could you ask for?!



INGREDIENTS:

                1 Nilla wafer prepared pie crust
                1- 5.1oz box instant vanilla pudding mix
                1 1/2 cups cold milk
                1- 8 oz tub Cool Whip, thawed to room temp, divided
                2 medium/large bananas, sliced
                1-2 Tbsp lemon juice
                2 ½-3 cups coarsely chopped Nilla Wafers, divided
                caramel or salted caramel sauce for drizzling,

DIRECTIONS:
  1. Preheat oven to 400F
  2. In a large bowl, whisk pudding mix and milk.
  3. Fold in half the whipped topping.
  4. In a separate bowl, slice the bananas, drizzle with lemon juice; toss to coat (to prevent the bananas from turning brown).
  5. Fold bananas and about 1 1/2 heaping cups Nilla wafers into pudding mixture.
  6. Turn mixture out into pie crust.
  7. Gently spread remaining whipped topping onto top of pie
  8. Sprinkle remaining Nilla wafers, cover with plastic wrap, and refrigerate for at least 4 hours, or until set.
  9. Prior to serving, drizzle with caramel sauce to taste.
